Here's an easy-to-follow traditional recipe for Els Pastorets, a hearty stew crafted from the bounty of Catalonia's countryside.
Ingredients:
- 500g lamb shoulder, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 2 carrots, peeled and diced
- 2 potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups beef or vegetable broth
- 1 cup red wine
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced lamb pieces. Season with salt and pepper. Cook until the lamb is browned on all sides, about 5-7 minutes. Remove the lamb from the pot and set aside.
2. In the same pot, add the diced onion and garlic. Sauté until softened and fragrant, about 2-3 minutes.
