  • 4 cups whole milk
  • 1 cinnamon stick
  • zest of 1 lemon
  • zest of 1 orange
  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch

Step-by-Step Guide: How to Make Crema Catalana Like in Barcelona

  1. In a medium saucepan, combine the whole milk, cinnamon stick, lemon zest, and orange zest. Heat over medium-low heat until the mixture begins to simmer. Remove from heat and let it steep for about 15 minutes to infuse the flavors.

  2. In a mixing bowl, whisk together the egg yolks and granulated sugar until pale and creamy.

  3. In a separate small bowl, dissolve the cornstarch in a few tablespoons of cold milk, then whisk it into the egg yolk mixture until smooth and well combined.

  4. Remove the cinnamon stick and citrus zest from the milk mixture, then return the saucepan to the stove over medium heat.
